
Blueberry Meyer Lemon Jellyroll-Perfect for 4

Want a perfect summer dessert? This light blueberry meyer lemon jellyroll is perfect! Love love, meyer lemons, as they are both sweet and just a hint tart making them a wonderful highlight for celebrating summer.
This dessert is perfect for 4 servings and along the lines of a mini type dessert. Since its just my husband and I, we get to enjoy it 2x over!
I discovered meyer lemons a few years ago and they have been a game changer. Absolutely love them!!! When I see them in the store I get so excited, can hardly wait to get home and start baking. Here is the 411 about them here.
Loving Lemons
Lemons are actually one fruit that I have not always been crazy about. As I’ve gotten older, it has become such a favorite and I love baking with them especially, this version of lemons. In addition to baking, they are equally wonderful in cooking and make for one fantastic Chicken Picatta and are super awesome in Mediterranean cooking.

Great Blueberry Accompaniment
Recently upon moving to AL, I am discovering some great farmers markets. One of my finds include this homemade blueberry jam. When I saw it on the shelf, I just had to get it. Oh so delicious and not too sweet. I thought, what a perfect filling this would make in a jellyroll.

Blueberry and lemon are one of those classic flavor combinations. Some of my favorites include:

- Blueberry Lemon Pancakes
Lemons just adds such a brightness and freshness to anything and particularly like to take advantage of the whole lemon, using both the zest and the juice. As well as, finding ways to throw lemon zest into many dishes!
Blueberry Meyer Lemon Jellyroll Recipe
The recipe uses a standard sponge cake which is super light made with cake flour. Meyer lemon zest(I used the whole lemon) and 1 TBS of the juice is added to the batter. Whipped egg whites are folded in to make it light and airy.

I use a 1/4 sheet pan to make a small version for 4 people. So, this is 1/2 the size of a regular sheet pan. The cake bakes up super fast and under 10 minutes.

The sponge is super pliable and makes it easy for rolling up immediately after baking.


The fresh jam gets spread all over the unrolled, cooled cake. I’m so tempted to have a taste of cake and jam together but I’m patient to wait till its all complete!

Once filled, the cake gets another roll and wrap in saran wrap headed to the fridge to “chill.”
Time to decorate, I trim off the ends on both sides then pipe three rosettes of fresh whipped cream on the top. Few fresh blueberries and half sliced lemon on each to bring it all together. A dusting of powdered sugar is always a nice final touch.

Placing the dessert out at room temperature for an hour before serving makes it perfect to enjoy! I love adding a bit more cream and jam to the plate for dipping.

The lemon and blueberry just go so well together and you can really taste the awesomeness of the meyer lemon in the cake. Super simple dessert and totally taste like summer!
