
Double Chocolate Peanut Butter
Chocolate Peanut Butter Cookie Sandwiches

With Valentine’s Day and the month of February upon us, there is nothing like whipping up some great chocolate recipes to celebrate the month of all thing’s chocolate. These Chocolate Peanut Butter Sandwich cookies celebrate just that.
The cookies are made from a delicious chocolate cut out recipe, baked off, then filled with half peanut butter buttercream and half chocolate buttercream. Yumalicous! Wait, is that even a word?
Crisp and Creamy
Texturally, these cookies give you a crisp and creamy bite every time and you can even eat them like an Oreo by opening up the top cookie and diving into all the filling, then munching on the crisp cookie.
However, I recommend you eat them together getting cookie and cream with every glorious bite! Exceptionally wonderful with an ice cold glass of milk or your favorite coffee.


Ideally, they make a great before bedtime snack if get a sudden craving of chocolate. Really, they are perfect for anytime of the day.
Getting Started
Dough
Here is how they are made. I first take the chocolate dough and cut that out using a square and circle cutter. I like to mix up shapes for fun and I’m thinking the square shape will be my favorite.
After they are baked, they get coupled together for tops and bottoms.

Chocolate and Peanut Butter Buttercreams
I whip up batches of peanut butter and chocolate buttercream. Each gets put into a pastry bag with a plain tip.


Let the party get started! On each half of the bottom cookie, I pipe half with peanut butter and the other half gets chocolate.
Two In One
The tops get placed back on top and gently pressed to adhere to the filling.

I love them as is, but wanted to give them a extra special look by a quick dusting of powdered sugar. I cover half of the top cookie with a piece of parchment paper or anything with a flat edge that just allows half of the cookie to be exposed.

A little sprinkle of powdered sugar and you get a simple and easy decorations that really makes the chocolate cookie pop. You can vary this by changing the direction of the paper on top to get a diagonal effect.
