Pretty-N-Pink Cupcakes-Crazy for Pink

I’m crazy for pink, especially pink cupcakes. Yes I have a confession, I love everything pink! There is just something about that color that just makes you smile doesn’t it? It just screams happiness to me and brightens up any day and room.

Pink is signature in my kitchen, if you met me you would probably see me in my pink chef coat and of course, there is always pink icing on hand.

One of my favorite cupcakes I designed in my baking business is this pretty-n-pink version (reminds me of the 80’s movie and soundtrack that was super popular). Ironically, ended up being a big seller, especially at arts and craft events.

Pink Cupcakes- Vanilla Orange

The foundation for this pretty cupcake is a simple vanilla cake with a hint of orange flavoring to make it super bright and unique. I love the taste of orange cake, and it’s a great flavor combination that offers both brightness and super delicious, perfect for spring and summer.

Pink Cupcakes-Icing Galore

American buttercream is this go-to icing for these pink cupcakes. Traditionally, this buttercream is loved by many but may be too sweet for some as well. Also, I find this buttercream consisting of butter and powdered sugar produces a more stable icing for warmer weather.

This is such a fun cupcake to serve at ladies’ functions, girl’s birthday parties, and even on Valentine’s Day. In fact, I use to make cupcakes for a customer who hosted little girl parties. These pink cupcakes went perfectly along with her pink and girly theme.

Not only would this be great for parties, but perfect on one of those rough days at the office “come home and splurge” treats.

Pretty-N-Pink Cupcakes-Crazy for Pink

Delicious orange cake topped with beautiful pink icing for a bright and fun cupcake.

Ingredients

CAKE:

1 stick unsalted butter(softened)

3/4 cup sugar

2 eggs

1 tsp orange extract or flavoring

1 T orange zest

1 cup flour

1/2 cup cake flour

1 1/2 tsp baking powder

1/4 tsp salt

1/2 cup milk

ICING:

1/2 cup unsalted butter (softened)

4 cups powdered sugar

1 tsp vanilla

1/4 cup milk

pink food coloring

Instructions

Cupcakes

Line a muffin pan with 12 cupcake liners, preheat oven to 350.

In a mixing bowl, cream the butter with sugar till creamy.  Add eggs and mix well.  Add in the zest and orange flavoring.

Combine all the dry ingredients together in a bowl.  Add this to the sugar mixture alternating with the milk.  Starting with the flour mixture.

Mill till everything is combined and the batter is smooth.

Scoop into cupcake liners about 2/3 full.

Bake 18 minutes till toothpick inserted comes out clean.

ICING

In a mixing bowl with a paddle attachment, cream the butter till smooth and creamy.

Add the powdered sugar, milk, and vanilla and mix on low speed till combined.  Turn up the mixture to medium high and mix for one minute till fluffy.

Add in the pink coloring to your desired darkness and mix on low medium till the color is fully incorporated.

Placing icing in a piping bag with a large star tip and pipe icing on top of each cupcake.  

Decorate with pastel sprinkles.
