Pumpkin Granola Orange Bread-Flavors of Fall

As September comes to a close the kick off for the fall season is in the mix. One thing that surfaces is all things pumpkin. Does this get you as excited as I am? Everywhere you go you see pumpkin flavored foods and beverages (Pumpkin Spice Latte anyone???). With that, it’s definitely time to stock up your pantry with pumpkin. Excitingly, I’m starting the season off with my Pumpkin Granola Orange Bread.

Color, Color, Color

Pumpkin and orange are flavors that work so well together. Sometimes, I never know how a recipe will come together or an idea about a recipe until I’m in the kitchen making it. Creativity just surfaces at the right time and adding orange was one of those brainstorms.

No question about it, I love the color of pumpkin and opening up a can, you can’t ignore the vibrancy it displays. Healthy too, as it’s an excellent source of beta-carotene! Not to mention, magnesium and potassium as well.

Flavor and Texture

The recipe marries two oranges (pumpkin and orange zest) that come together for a super delightful flavor combination. The orange zest really brightens and showcases the pumpkin off as it well deserves.

Texture comes in the form of hint of maple brown sugar flavored granola that gets baked on the top. Honestly, it seals the deal and brings this whole recipe together. You can use any of your favorite granola. I love to make it homemade as it is super simple to make and delicious.

  • A wonderful crunch for the top
  • Eye-catching finish for the bread

Shapes and Sizes

Also, this recipe can be made using a mini loaf pan or a single loaf pan. Here, I used the mini loaf pan for individual servings. Additionally, I left some of the breads plain without any granola for those who love all things simple.

This pumpkin bread makes for an excellent addition to the fall season. Not to mention, goes wonderfully with a cup of coffee or hot tea.

Pumpkin Granola Orange Bread-Flavors of Fall

A great fall flavored bread loaded with pumpkin and orange and topped with crunchy granola for a festive quick bread.

Ingredients

Units Scale
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1/2 tsp orange extract
  • 1 orange (zested)
  • 1 cup pumpkin (canned)
  • 1 cup sugar
  • 1 cup flour
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/8 tsp allspice
  • 1/8 tsp cloves
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 tsp baking soda
  • 1 cup granola

Instructions

  1. Preheat oven to 350.
  2. Spray a mini loaf pan with cooking spray.
  3. In a mixing bowl, combine the oil, sugar, eggs, extract, and zest. Add in the pumpkin. Add all the dry ingredients and mix well and combined to a smooth batter.
  4. Place into the mini loaf pans, fill about 2/3 full. Sprinkle the top with granola.
  5. Bake 15-20 minutes till done and cake tester reveals doneness.
  6. Let cool on baking rack 5-10 minutes. Pop out of the pans and cool completely.

Notes

These can be wrapped individually in saran wrap and stored in freezer bag.
