Quarantine Cookies-Clear the Cupboard

Hard to believe the times in which we are living in our nation and world with this pandemic. It’s a bit surreal and seeing a lot of grocery store shelves empty. Flour was an ingredient I never thought would be in high demand. Anyway, I decided to use the downtime at home to do a little baking for family and neighbors. These Quarantine Cookies are not only tasty, but a great way to use up some leftover pantry items and turn them into something creative and yummy.

Pantry Cleaning

These cookies also serve another purpose, cleaning OUT my panty in preparation for a move down south this summer. Hmmm, as I looked to see what I had in my dwindling pantry, the ideas started flowing.

  • Pretzels
  • White Chocolate Chips
  • Oatmeal
  • Dried Blueberries
  • Rice Krispies

Interesting combinations I know, right? But they sure come together for a delicious cookie. You get a little sweet and salty and an array of textures in every bite.

Little Inspiration

When I worked in corporate catering, one of the cookies we offered on the cookie and brownie platters was a white chocolate chip blueberry. They were my favorite, and still are. Just love the combination of those two ingredients together.

Hence, this was the idea and basis of my recipe for these Quarantine Cookies. When I looked in the pantry and saw the bag a few pretzels, I thought, this is perfect to round out the cookie giving it a hint of saltiness and crunch. Also, a great way to use up those last pretzels bits at the bottom of the bag.

I love anything pretzels, especially that awesome strawberry pretzel salad that is so popular. Baking the pretzel crust gives off the most amazing smell.

Substitutions

Some items you could also use:

  • Dried cherries or cranberries
  • Rice or Corn Chex
  • Butterscotch or Chocolate Chips
  • Coconut
  • Potato Chips

Quarantine Cookies

Using pantry items to create a delicious cookies loaded with white chocolate chips, pretzels, rice krispies, dried blueberries, and oatmeal.

  • Prep Time: 15 minutes
  • Cook Time: 10 minutes
  • Total Time: 25 minutes
  • Yield: 15 cookies 1x

Ingredients

Units Scale
  • 1/2 cup butter-unsalted (softened)
  • 1/3 cup brown sugar
  • 1/3 cup sugar
  • 1 egg (large)
  • 1 tsp vanilla
  • 1 1/4 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup dried blueberries
  • 1/4 cup oatmeal
  • 1/4 cup white chocolate chips
  • 1/4 cup Rice Krispies
  • 1/4 cup pretzels (chopped)

Instructions

  1. Preheat oven to 350. Line two baking sheets with parchment paper.
  2. In a stand mixer with the paddle attachment, cream the butter and both sugars till creamy.
  3. Add in the egg and vanilla and mix till combined. Add in the flour, salt, and baking soda and mix just till combined.
  4. Add in the dried blueberries, oatmeal, chips, cereal, and pretzels and mix till combined.
  5. Drop by rounded teaspoons or a medium cookie scoop onto the lined baking sheets.
    Bake about 8-10 minutes just till the edges are lightly browned.
  6. Cool and eat as many as you want to get through each day of quarantine!
