Sometimes you need one of those recipes that you can pull out of your hat and get on the dessert table, fast! This one definitely fits the bill. This quick Apple Ozark Pudding can be put together super quick, and ready to eat in an hour.

Apples Steal the Show

Apples get showcased here in this super simple recipe that I know will become a go-to in a time crunch that you can impress your family and guests with. Not to mention, a great recipe box addition.

The recipe hails from my days as an Army Wife, where I spent 20 years alongside my husband moving and cooking in 7 states and Europe. As well as, meeting many amazing people. Especially, great cooks!

Saluting Army Wives

Most of the time, each duty stationed we were assigned to there would always be a cookbook where us wives would contribute recipes to. I have to tell you, the Army Wife Cookbooks are some of the best in my library. Usually recipes in these hail from many family favorites and they are all so delicious. Of course, tried and true.

This recipe does not disappoint!

While stationed at Ft. Hood, TX; one of these great cookbooks was made and I still to do this day enjoy thumbing through the pages remembering friends and patriots from the 4th Infantry Division. This recipe caught my eye and I was so glad I tried it! Total keeper!!!

Cake or Cobbler?

Despite the name, this apple dish is more like a play on a crisp and a cobbler together in one. My personal “throw-in” is some granola on top so when it bakes you get the wonderful filling with a little crunch on top.

One delicious spoonful you get the granola, apples, and pecans and a little “cake-like” taste. Yum, yum!

I love serving this Quick Apple Ozark Pudding anytime of the year. Just like apple pie, this dessert is somewhat of its cousin and great enjoying in all seasons.

Finally, a must is serving this with a scoop of vanilla ice cream on top. Perfect accompaniment and the creaminess goes hand in hand with the delicious apples. Ice cream and apples were just meant to be together!

Quick Apple Ozark Pudding

Delicious and quick apple dessert with pecans and granola that bakes up super fast and perfect for a quick go-to dessert!

Ingredients

Units Scale
  • 1/4 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 3 TBS flour
  • 1/4 tsp salt
  • 1 1/4 tsp baking powder
  • 1 medium-large granny smith apple (peeled, cored, and sliced into 1/2″ pieces)
  • 1 tsp lemon juice
  • 1/4 cup pecans
  • 1/4 cup granola (any variety)

Instructions

  1. Spray a small 8″ baking dish or pan with cooking spray. Preheat oven to 350.
  2. In a stand mixer with a paddle, cream the sugar with the egg till thick. Add in the lemon juice. Add in the flour, baking powder, and salt. Mix in the apples and pecans and blend till combined. Sprinkle granola on top.
  3. Pour into the baking dish and bake 20-25 minutes. batter for apple pudding in a pan
  4. Remove and cool 5 minutes.
