One of my breakfast favorites are English muffins. What’s not to love? They are perfect accompaniment to you coffee or tea. I’ve been eating them forever and especially love them with jam and peanut butter, lightly toasted of course.

My favorite store bought English muffins are the whole grain and blueberry flavors. Gosh I love the latter, the blueberry version is just so good and I love all things blueberry. Lightly toasted and can be enjoyed in so many ways including a big pat of butter just oozing off a hot muffin!

Not Just For Breakfast Muffin

Not only for breakfast though, they make a great lunch and snack. Particularly, I love them with toasted with peanut butter and sliced bananas on top and a drizzle of honey.

Another great snack or even an appetizer is putting some pimento cheese on top of sliced muffins and baking till bubbly. Cut into quarters for a great appetizer.

Helpful Tool-English Muffin Rings

Years ago I purchased some English muffin rings to start making my own homemade versions. However, they literally sat on my baking shelf for years before ever pulling them out. These are 4″ rings that make the perfect English muffin.

2021 has brought several New Years resolution including giving it a go on making these guys. I’m glad I just went for it because they are really quite simple to make. They are so good and there is nothing like homemade bread too, right?

Recipe

This is a simple recipe that is super easy to whip up with not a lot of fuss with ingredients. I like to use half bread and regular flour, but you can use regular flour.

There are two ways to make these using the rings, baked in the oven or cooked in a skillet, (I used a pancake griddle). Either way they are super fun and easy to whip up. Also, they freeze wonderfully to enjoy later.

I was thinking back to a fun memory, when my kids were young and I needed a quick meal, I would whip up some English muffin pizza’s for dinner. They were quick and easy. But mostly, delicious!

Instructions
  1. Add the yeast to the warm water and whisk together. Allow to stand 5-10 minutes till bubbly. In a medium bowl, combine the flours, salt, and sugar.
  2. Add the yeast mixture along with the milk, cream, and butter to the flour mixture. Stir with wooden spoon till smooth. It will be sticky.

  3. Cover with towel and allow to rest for 30 min. This will double in size.

  4. Preheat a skillet to about medium heat. I used a pancake griddle. Spray the baking rings with cooking spray. Spray the skillet just lightly with cooking spray, sprinkle cornmeal on the skillet. Place the rings into the skilled.
  5. Grab a large ice cream scoop and scoop a portion into each baking ring. Fill it to the top or 3/4 of the way. You may need to flour your fingers to press it into the rings evenly.

  6. Cook for about 8-10 minutes. Then flip each ring over to cook the other side. Cook for another 8-10 minutes till lightly golden, removing the rings after 1-2 minutes on this side.

  7. Remove from the skillet and cool slightly before enjoying.

Recipe Notes

When fully cooled, these can be frozen in a freezer bag.  To enjoy, remove from freezer and microwave 30-40 seconds.

Incorporate citrus zest into the batter for an additional layer of flavor!
