Delicious chocolate cookie with a burnt marshmallow center topped with crushed graham cracker crumbs and a drizzle of chocolate for a fantastic smore experience!

  1. Preheat oven to 350 and line two baking sheets with parchment paper. In a mixing bowl with a paddle attachment, cream the butter with the sugar till smooth and creamy. Add in the egg and coffee flavoring/vanilla. Add in the dry ingredients and mix till a combined dough is formed.
  2. With a small cookie scoop, scoop out the mixture and place on baking sheet about 2″ apart. Sprinkle each cookie with graham cracker crumbs. These will get nice and toasty as they bake. Bake about 9 minutes being careful not to overbake.
  3. Remove from the oven and immediately place a flattened marshmallow gently on top of the cookie. The heat from the cookie will set the marshmallow. Cool completely. With a kitchen torch, lightly flame each marshmallow just enough to give it a lightly golden or blackened color. Microwave the chocolate bark and drizzle over each cookie and allow to set. Happy Fall
Recipe Notes

Cookies can be frozen.  Allow to cool completely and place in a freezer container in layers separated by parchment paper to prevent from sticking.
