Smores Cookies-Perfect for Fall

Smores are the total bomb when it comes to cooling temperatures and changing leaves, would you agree? Although I’m a total fan of the traditional smore, I love eating and making them into this handsdown delicious Smores Cookie version!

Join me on my quest to make this a quick go-to version where no campfire is required! All that is needed for that smoky crusty taste is a kitchen torch. Wonderfully, it makes a great replacement for the fire crusty black delight.

This amazing cookie is a chocolate dream come true and one that you will love sharing with everyone you know!

The Recipe

Chocolate, yes the sidekick is the foundation for the cookie. I take one of my favorite chocolate cookie recipes and turn it upside down adding all the standard components. However, I add just a touch of bread flour to bring in some added chewiness.

Chocolate is the centerpiece of this cookie and its so ooey-gooey chewy delicious. Perfect base for the rest of the smores components!

The chocolate cookie gets baked off with graham cracker crumbs that turn a nice golden color give a crunchy texture.

Toasted marshmallow is at the center of the action. Once the cookies are removed from the oven, a marshmallow is placed a on top and roasted with a kitchen torch to get that signature look.

Finally, to seal the deal, this delight gets covered with a chocolate drizzle that hardens for another special crunch. Optional, of course.

Chocolate: Comes in the form of the cookie and the drizzle on top.

Marshmallow: Quick shortcut in using the large marshmallows from the store that sit nicely on top.

Graham Crackers: These are crushed to crumbs and are sprinkled on top of the cookie.

Smore’s Cookie

Delicious chocolate cookie with a burnt marshmallow center topped with crushed graham cracker crumbs and a drizzle of chocolate for a fantastic smore experience!

Ingredients

Units Scale
  • 10 TBS unsalted butter (softened)
  • 1 cup sugar
  • 1 egg
  • 1 tsp coffee flavoring or vanilla
  • 3/4 cup flour
  • 1/4 cup bread flour
  • 1/4 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup graham cracker crumbs (crushed yourself or store bought graham cracker crumbs)
  • 12 large marshmallows (cut in half and flattened slightly)
  • 1/2 cup chocolate bark (melted)

Instructions

Preheat oven to 350 and line two baking sheets with parchment paper.

Cream the butter with the sugar in a mixing bowl with a paddle attachment till smooth and creamy.

Add in the egg and coffee flavoring or vanilla.

Add in the dry ingredients and mix till a combined dough is formed.

Scoop with a small cookie scoop the mixture and place on baking sheet about 2″ apart.

Sprinkle each cookie with graham cracker crumbs. These will get nice and toasty as they bake.

Bake about 9 minutes being careful not to overbake.

Cool completely.

Flame lightly with a kitchen torch, lightly each marshmallow just enough to give it a lightly golden or blackened color.

Microwave the chocolate bark and drizzle over each cookie and allow to set.

Notes

Cookies can be frozen.  Allow to cool completely and place in a freezer container in layers separated by parchment paper to prevent from sticking.

Depending on the size of your cookie scoop, quantities will vary.
