Spring cupcake ideas make me think, pastels! I love spring and a great spring dessert is most definitely a cupcake. Using the pastel colors, I create some fun and colorful cupcake ideas with creative piping and frostings to celebrate one of my favorite seasons.
Spring Cupcake Recipes
Keeping it simple, I think a really good vanilla and chocolate with colorful decorations is all you need as a canvas and a palate in which to create these spring cakes.
Chocolate Cupcake Recipe
My go to chocolate cake recipe is simple and so delicious. I have been using it for years and its one of the best. It never lets me down and tried and true. Everyone loves it and I think you will too. Additionally, it’s one of those solid cake recipes that just never fails.

Ingredients
1 cup sugar
1/2 cup + 1 T all-purpose flour
1/2 cup + 1 T cake flour
1/2 cup + 1 T cocoa powder
3/4 tsp baking soda
3/4 tsp baking powder
1/2 tsp salt
1 egg
1/2 cup milk
1/4 cup vegetable oil
1/2 tsp vanilla
1/2 cup boiling water
Instructions
Preheat oven to 350 degrees and line muffin pan with cupcake liners for 12-15 cupcakes.
Place all the dry ingredients into the bowl of a stand mixer with the whisk attachment, whisk on low for 15 seconds till combined.
Microwave water for one minute in a glass measuring cup.
Turn the mixer on low medium and add in the egg, oil, milk, and vanilla. Mix till all combined.
Slowly add in hot water and mix, stopping to scrape the bowl on the sides and bottom.
Mix till smooth and combined. Batter will be loose.
Pour the batter into the liquid measuring cup and then pour into each muffin cup filling it 2/3 full.
Bake 14-15 minutes till cake tester comes out clean.
Cool in pans 10 minutes, then remove cupcakes to cool completely on a wire rack
Notes
Cupcakes can be made, cooled then placed in a container or freezer bag and freeze up to 2 months.
Vanilla Cupcake Recipe
There are so many varieties of vanilla cupcakes recipes I have tried over the years, and I have a few favorites. But keeping it simple, this one is just a classic and pretty standard. Super simple to come together and easily doubled or cut in half.
Russian Piping Tips

First design highlights Russian piping tips. They are large decorator tips and come is MANY designs. You almost need some type of map/guide to know what design each tip will give. Along the way I have found some favorites and use them quite a bit but fun to experiment with all of them.
They can be found almost anywhere, even Amazon. It takes a little practice in getting the right pressure and release to form beautiful 3D looking flowers. They are really quite amazing and super fun to play around with.
Icing Colors
For the icing, I take buttercream and color them with different pastel colors, using a different tip for each color. These get placed in piping bags and ready to go.
Also, I color a small amount of buttercream in a light green to use for the leaves. This is placed in a piping bag with a “leaf” tip (Wilton 67).

Russian Piped Flowers
- Flowers are pipped first very close to each other
- Piped leaves fill in any gaps and piped around some of the flowers

Spring Cake-Simple Dipped
The second spring cupcake ideas is super simple. Vanilla cupcakes are baked and then dipped in a icing glaze. This glaze is pretty thick and colored with a touch of yellow.
On top, I pipe one flower using different Russian piping tips and place a small leaf beside it. Thats all that is needed to bring spring to life in the form of a cupcake.

Pretty n Pink Cupcakes
Pink cupcakes just scream spring! Of course, my favorite color and they just bring a smile to your face with that dazzling color. This cupcake recipe traditionally I do vanilla or strawberry flavored. Sometimes chocolate as well as the pink and black are wonderful contrasting colors.

Simple buttercream is used with a star tip to decorate, and of course fun sprinkles finishes it off!
